FINE FOOD GOES WILD IN DORSET
Forget the BBQ this Summer, this season's culinary entertaining is going native! Impress your friends by making an open air oven pit and your very own charcoal to cook under the stars or build your own back garden bread oven. Soundbite Cookery School's Bushcraft and Cookery Camps will teach you all you need to know plus how to forage for wild ingredients in the heart of the Dorset countryside.
Professional chef and proprietor of the Soundbite Cookery School, Jane Luxmoore, and food foraging enthusiast and woodsman, Sunny Stanley, have combined forces to design a series of exclusive weekend workshops for adults and children.
“We aim to take people on a culinary tour of Dorset,” says Jane. “We'll be leading expeditions into our local 400 year old woodland seeking out amazing wild ingredients to add to the traditional and contemporary dishes we prepare. We have a rich selection of meat and cheeses which all come from small producers within a five mile radius. The vegetables are from our own garden and our chickens will provide the eggs. It's the ultimate field to fork experience.”
Like many foragers Sunny can trace his interest back to his childhood, using the skills handed down through the generations of his family. His passion for the countryside and good honest food is infectious, “We'll be learning how to identify woodland ingredients such as wild garlic, sloes, Hawthorne leaves and blackberries for our cooking along with making oven pits, charcoal and cooking on hot stones under the stars. We'll also have a go at making shelters and utensils from wood. It's a wonderful way to bring people together to share their passion for great food and give them skills they can pass on to their own family and friends.” Sunny also brings fun into the camps with great games and team building tasks developed over the years from his military background.
